Celebrate a Mindful Diwali with these Superfoods if you have Obesity and Diabetes

Diwali or the ‘festival of lights’ is one of the most popular festivals in India when the entire country celebrates the victory of good over evil. Apart from the excitement and enthusiasm that accompanies the festival, it is also the time when you forget about your diet regime and indulge in sweets and other delicious dishes. However, if you are obese and have diabetes, it is crucial to keep a check on what you’re consuming to stay fit and healthy.

While the festival remains incomplete without some traditional delicacies, there are plenty of superfoods that you may include in your diet plan to enjoy a mindful Diwali with your loved and dear ones. Here are some superfood recipes to help you celebrate a mindful Diwali.

TOFU KATI ROLL

Ingredients for the Roti:

Method:

Make a smooth dough out of the flour by adding little water and keep it aside for some time. Add the above-mentioned ingredients to make a stuffing out of tofu. Add it into a pan with little oil and sauté it. Roll the tofu stuffing with the roti and serve hot.

CHINESE VEGETABLES IN WHITE SAUCE

Take oil in a pan, add garlic paste, and stir fry the steamed vegetables. Take another pan, add oil, wheat flour and sauté for 2-3mins. Now add the milk to the flour and allow it to thicken for 3 minutes. Then add the stir-fried steamed vegetables along with salt and pepper, sauté for another minute and serve hot.

DIGESTIVE TEA

Take all the ingredients except Pudina and pound it a bit. Chop the Pudina and put all the above ingredients in 500 ml water and keep it on a medium flame and bring to boil. When it starts to boil, reduce the flame and add 2 pinches of cardamom powder to the boiling water. Keep a lid over the vessel and let it boil on a low flame for one minute, filter and serve hot. You can add black salt and lemon as desired.

RAVA CORN DHOKLA

Combine the sweet corn and curd and blend in a mixer till it is smooth. Add semolina, ginger-garlic paste, salt and ½ cup of water and mix well. Just before steaming, sprinkle the fruit salt and add lemon juice over it. When the bubbles form, mix gently and pour spoonfuls of the batter immediately into the greased moulds. Steam for 15-20 minutes or till the dhoklas are cooked.

ASPARAGUS PARSLEY SOUP

Simmer the vegetable stock with asparagus and parsley till the asparagus becomes soft. Then, remove the parsley and grind the other ingredients until smooth. Add salt and pepper according to taste.
