4 Easy Summer Healthy Salad Recipes for your Picky Eaters
1. Sprout Salad– Sprouts salad is a healthy salad for summers. Green moong daal sprouts with finally chopped veggies is a powerhouse one time meal for your baby.
Ingredients- Green moong daal sprouts – 1 cup
Carrot-1peeled and grated
Lime juice as taste
Salt acc to taste, coriander leaves
Take bowl and mix well all and give it to your baby.
2. Quinua Salad- exclude fride rice from your chinese platter and add this quinua salad. It is gluten free, so people with gluten allergy can have it.
Ingredients- 1 1/2 cup of water
1 cup quinua uncooked
1 medium bell pepper red ,yellow
1 small chopped onion
1/2 chopped carrot
1/2 teaspoon of curry powder
Lime,salt,black pepper according to taste
4 chopped almonths
Boil quinua in water on high flame, continue to simmer over low heat untill water has been absorbed. Once its cooked, pour in bowl n keep it in refrigerator. Once chilled, stir red, yellow peppers, onion, curry powder, lime juice, almonds,carrots. Salt to taste and serve chilled.
3. Barley salad- Barley is very healthy ingredient for your picky eater. It can be easily digested and its highly rich in protein.
Ingredients- 1 cup uncooked barley, cook it according to package directions and let it cool.
2 diced tomatoes
1/3 cup chopped carrots
3 teaspoon lime juice
4 tspoon virgin olive oil
Salt to taste
Take one bowl, put barley and all chopped veggies. In another bowl add oil and salt, pepper. Mix well and pour this dressing over salad. Serve chilled or normal according to taste.
4. Chickpea salad- One more healthy bowl for fussy eaters.its included in one proper meal.
Ingredients-1 cup boiled chickpea
1 chopped tomatoes
1 chopped onion
1 chopped carrot
1 boiled potato cut in cubes
1/2 chopped cucumber
Lemon juice, salt according to taste.
Mix well all ingredients in bowl. Add salt, lime juice according to taste and serve it.
